While this book was an eye-opening look at how Milk is produced, I wished that the author would heave dug a little deeper into milk around the world and not just the US. For Canadian consumers much of the information does not apply (especially the experiments section), but this is more the fault of the Ontario Dairy Board. I would have preferred a book just about milk without any of the recipes.
